1 2/3 cups AP flour
1/2 cup dutch process cocoa
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large egg whites
3/4 cup buttermilk
1 cup dark brown sugar, firmly packed
1 cup unsweetened applesauce
3/4 cup dark corn syrup
2 teaspoons vanilla extract
12 cup tube or bundt pan, sprayed with vegetable cooking spray and coated with fine, dry bread crumbs.
Set a rack in the lower third of the oven and preheat to 350 degrees F. Sift the flour, cocoa, baking powder, baking soda, and salt into a medium bowl. Stir several times to mix. In another bowl, whisk together the egg whites and buttermilk, just to combine. Whisk in the brown sugar, then the applesauce, corn syrup, and vanilla, one at a time, whisking until smooth after each addition. Soft the dry ingredients over the egg white mixture and gently stir in with a large rubber spatula. Scrape the batter into the prepared pan. Bake the cake for 40 to 50 minutes, or until a toothpick or cake tester inserted midway between the side of the pan and the central tube emerges dry. Cook the cake on a rack for 5 minutes, then unmold onto a rack to cool completely.
I used dry buttermilk and water, and my bundt pan was coated with flour because my bread crumbs were not fine bread crumbs. This cake baked for 40 minutes...and it unmolded just fine. It smells good...and is still cooling. It's tonight's dessert. Hopefully it came out okay. I'm worried that when I was mixing the wet and dry ingredients together that I mixed too much, so we'll see.
